All the shellfish we sell is caught by artisanal fishery techniques and with traps, to preserve the resources and to ensure the product quality.

We do not encourage the trawling fisheries due to the deterioration that generates this type of fishing in shellfish and above all due to the environmental impact.

There is a clear and specific legislation of responsible and sustainable fisheries in the UK, studies of biomass and species diversity, with certain fishing areas for the various species. The fisheries authorities from the areas where we get our products define the suitable areas for fishing. The restrictions are fully respected, such as minimum sizes or females that are spawning or specimen that are changing their shell.

Due to the extreme weather factors in the area, fishing is done at times when the weather permits, making product availability sometimes limited. Another factor to note is the high commitment to the care of the products has taken the small local fishing community; the number of fishermen does not increase predominantly, because the fishing grounds are inhospitable, which represents a natural barrier to entering the business. These factors have allowed the maintenance of species over time without putting them in danger of overexploitation as it has happened in other countries. In addition to this, there are local authorities that control fishing parameters, such controls are carried out sporadically. Fishermen know the rules and they respect them because they know that it depends on the sustainability of their business in the future.
